Cherry ViBERi Bars

 

We have a good one for you here! created for us by @sarahtannernz,  Perfect for the festive time of year, the recipe makes good use of the sweetness of in-season Cherries, and the tangy deliciousness of ViBERi freeze-dried Blackcurrant powder.

Perfect for the Cherry lovers - these Cherry ViBERi bars not only taste delicious, but look equally as good on a platter at your next Christmas function as they do being devoured on your next camping trip!

Ingredients: (For approximately 12 bars)

1 cup desiccated coconut

1 cup ground almonds

1 cup fresh cherries, stone removed

¼ cup coconut butter

1 TBS maple syrup

1 TBS ViBERi blackcurrant powder

1 tsp vanilla

Melted dark chocolate to coat and chopped pistachio to top

Method:

Place all of the ingredients apart from the chocolate and pistachio into a food processor. Blitz until you get a nice dough mixture that holds together.

Press into a lined, small slice tray, or lined container. Place in the freezer to set for 2 hours.

Slice into your desired sized bars, coat in melted dark chocolate and sprinkle chopped pistachio to finish.

Keep in the freezer for a firmer texture, or the fridge for a soft centre.
