A deliciously wholesome Coconut Berry Slice made with natural ingredients such as coconut, blackcurrants, cashews, and dates. Gluten-free and perfect as a healthy snack or guilt-free dessert.
Ingredients
1 cup raw cashews
1 cup Medjool dates, pitted
1 Tbsp fresh lemon juice
Pinch of sea salt
2 cups raw cashews, soaked
⅔ cup coconut cream
1 cup desiccated coconut
3 Tbsp maple syrup
4 Tbsp fresh lemon juice
Zest of 1 lemon
¾ cup frozen ViBERi blackcurrants or SuperBeri Mix
3 Tbsp ViBERi Blackcurrant Powder
½ cup coconut cream
½ cup desiccated coconut
2 Tbsp maple syrup
2 Tbsp fresh lemon juice

Method
1. Line a 20 cm × 30 cm cake tin with baking paper so the edges overhang for easy removal. Make the base by blending cashews, dates, lemon juice and salt until they form a sticky dough, add 1 Tbsp water if it’s too dry. Press this mixture firmly into the base of the lined tin and smooth the surface. Freeze for 15–20 minutes, until set.
2. In the same bowl, combine all centre layer ingredients (soaked cashews, coconut cream, desiccated coconut, maple syrup, lemon juice and lemon zest) and blend until very smooth and creamy (about 30–40 seconds). Freeze again for about 15 minutes until firm.
3. Blend the frozen ViBERi blackcurrants or SuperBeri Mix with the Blackcurrant Powder, coconut cream, desiccated coconut, maple syrup and lemon juice for 30 seconds. Pour over the chilled centre layer. Freeze uncovered for at least 2 hours or until completely firm.
Place it on a cutting board and slice into even squares using a warm knife to avoid sticking and enjoy. Keep in the freezer for long storage or fridge for up to 4 days.
