Daily Ways with Blackcurrant Powder

ViBERi Porridge and Granola

 

Every wonder how you can incorporate ViBERi Blackcurrant Powder into your daily routine? 

Our new team member Kate has tried and tested a number of recipes. Here are some of her favourites: 

Blackcurrant Porridge:



This one is very simple!

There is no need to adjust your usual porridge recipe, simply add the daily 10 gram serving size to your wet ingredients and cook as usual. 

This will not only add zing to your porridge, it will also give it a vibrant purple colour — a big draw for young children!

You can add our ViBERi Granola (recipe below) as a topping, as well as our ViBERi Frozen Organic Blackcurrants.

 

 

  

 

ViBERi Granola: 


This recipe takes approximately 25 minutes to make and stores well in an airtight container, if it lasts long enough! 

Keep in mind when making this granola, you don't have to strictly stick to these ingredients. If you have a preferred nut or seed or maybe something that needs using up, just add it in!

Ingredients:

- 2 cups of oats 

- 1/2 cup walnuts

- 1/2 cup almond flakes

- 1/2 cup desiccated coconut 

- 1/2 cup coconut flakes  

- 1/2 teaspoon of cinnamon

- 1/4 cup melted coconut oil 

- 1/4 cup natural maple syrup (or alternative like honey)  

- 1/4 - 1/2 cup ViBERi Soft Dried Blackcurrants 

- 3-4 tablespoons of ViBERi Blackcurrant Powder

- 1/4- 1/2 cup ViBERi Freeze Dried Blackcurrants

- Pinch of salt 

 

Method:

Preheat oven to 180 degrees celsius.

Mix all dry ingredients except the freeze dried blackcurrants together in a bowl. Once combined, pour over the coconut oil and maple syrup, mix until completely combined.

Spread mixture evenly onto an oven tray and bake for 5 minutes to begin with. Give the mixture a toss after the initial 5 minutes and continue baking until lightly brown. All ovens are different so you'll need to keep an eye on the mixture to ensure it doesn't burn. 

Once cooled, mix through the freeze dried berries, I even added a few Cacao chocolate rolled berries as a treat.

This granola is great over porridge, yogurt or as a snack on its own! 

 

Hot Blackcurrant: 



This is a simple one to make and to sip on at any time of the day.

Ingredients:

- 10gm of ViBERi Organic Blackcurrant Powder

- Squeeze of lemon 

- 1-2 Tsp of Honey to taste 

Method: 

Stirring, combine blackcurrant powder with a small amount of cold to warm water to begin with to help the powder dissolve. From here on, continue to add hot water, followed by the honey and lemon.

This is an especially great natural combination over the winter months to help fight off colds and the flu.
